So… I’m trying to cut down on the calories and lose some lbs before our cruise in February. However, my favorite things in life are my husband, my dog, and pasta. And cheese. Can’t forget cheese. But how do I cut back on calories while not eating the equivalent of cardboard….?
Here is an excellent start 🙂 I hope you enjoy!
Thawed Shrimp (uncooked preferable, medium sized)
1/3 package of Alfredo sauce mix (I use Knorr brand in the green packet)
I Can’t Believe It’s Not Butter (yes, I use it. You don’t like it, find your own butter alternative)
1 tbs lemon juice
About 1/2 to 3/4 cups of white wine (to your taste preference)
1/4 cup heavy whipping cream or 1/2 cup whole milk
Salt and Pepper to taste
1. In a saute pan, melt butter and add white wine over medium to medium/low heat. (Size of pan and amount of butter and wine will depend on your preference and the amount of shrimp you have. I melted 1/2 cup “butter” and added 1/2 white wine).
2. Throw in shrimpies (I remove the tails on mine first) and coat generously with garlic powder and onion powder. Let cook for a few minutes, toss with butter and wine and season again.
3. Reduce heat slightly and shake about 1/3 of the alfredo mix over all the shrimp. Add the cream or milk and stir to combine. Add salt and pepper to taste.
4. Heat through and serve!
To make this dish extra healthy, I added green beans and served over whole wheat pasta (lots of fiber to keep you full).
