My Favorite Pasta Salad
Ok, so the image above is not the exact same thing as the recipe below, but it’s the closest I could find. I would have taken a picture of the batch I made, but it has already been snarfed down. Yay! But, booo when it comes to finding a picture that’s close. This pasta salad recipe is a tweaked from a recipe by my neighbor Kim. It’s so delicious I had to make some for myslef 🙂
Spinach and cheese filled Tortellini (found in pasta aisle by Barrilla)
Hard boiled eggs chopped
Boil noodles according to package directions. Make sure the tortellinis are al dente and not over cooked. Mushy tortellinis are a big no no. And it’s turns to glue.
Drain and cool pasta under cold water. Combine in large bowl with mayo, eggs, chopped celery, minced garlic, celery salt, salt, pepper and onion powder.
Best served chilled so refrigerate until ready to eat. The amounts of each ingredient are going to depend on how much pasta salad you want to make. HINT: start with a little mayo at a time and add as needed.
Additions/Substitution Ideas: You can add mustard to this recipe as well. I don’t care for mustard so I usually don’t use it if I can get away with it. Also vegetables like carrots, cauliflower, and broccoli are great in this salad. For an additional kick, try red pepper flakes or peppercorn ranch dressing.
Beware: this salad will go fast so don’t miss out on trying yourself!
