Serving mixed vegetables with dinner sounds obvious, but I found it’s a life saver to keep everybody happy when it comes to eating vegetables. One of my kids likes cauliflower and green beans, but not carrots and broccoli, while the other likes only carrots.
I cook it all and let them pick out the vegetables they’ll eat.
Ingredients:
Fresh vegetables such as green beans, carrots, cauliflower, and broccoli. I buy the Market Fresh mixed vegetables from Walmart. It comes in a bag and is already washed, cut, and ready to throw in the saute pan.
1/2 tbsp Garlic powder
1/2 tbsp Onion powder
Salt & Pepper to taste
2 tbsp margarine (I Can’t Believe It’s Not Butter is my favorite).
Directions:
Heat butter in a medium/large saute pan until mostly melted. Add the vegetables. Sprinkle seasonings over the entire batch.
Using a spatula, flip and stir the vegetables occasionally. I like my vegetables nice and crunchy so I leave them in between 5 – 10 minutes.
