Easy Guacamole

guac2This guacamole is a staple for every Sunday football party, holiday parties, and pretty much any event I get invited to.  It’s easy to make and absolutely delicious.

Serve with tortilla chips, pita chips, or chopped vegetables.  I will also fry up quesadillas or pita bread and serve as well.

 

Ingredients:

4 ripe avocados

1 can Rotel tomatoes with green chilies – drained

1/2 fresh lime

1/2 cup chopped cilantro

1/2 cup chopped green onions

Garlic powder

Salt & Pepper to taste

If you do not have an avocado pitter, see the link below to buy an awesome one from amazon.com.  Makes an awesome gift, too. You can also use a knife.  If you do not know how to properly cut and pit an avocado, I have included a video from Yum Sugar below.

Add avocados, rotel, chopped green onions, and cilantro to a large mixing bowl.  Squeeze as much lime juice as you can over the ingredients.  I use a citrus squeezer that was a gift from my step mom.  Using a potato masher, mash together until desired consistency. I like mine really smooth, easier to dip into with a chip.

Add garlic powder, salt, and pepper to taste.  Chill for at least 2-3 hours before serving.
