Broccoli & Cashew Salad

20130915123844BroccoliSalad1This is surprisingly delicious and packed with nutrients from broccoli, cashews, and raisins.  You can substitute the mayo with plain yogurt for a zap of probiotics and you can also add bacon bits if you’re wanting a flavorful crunch.

Ingredients:

1 large head of broccoli broken into florets (or you can buy a bag that is already broken up)

1/2 cup raisins

1 cup of roasted cashews halves (or whole or pieces – it’s up to you)

1 cup mayo

1/2 cup white sugar

1 to 2 tbsp cider vinegar (for extra sweetness)

1 small red onion chopped

Optional: 1/2 cup bacon bits

Directions:

Chop/break your head of broccoli if you did not buy a bag of pre-cut florets.

You can combine all of the ingredients and stir together, but I save the cider vinegar and the sugar AFTER I have combined everything else.  Depending on my taste buds that day, I will add the cider vinegar and sugar a little at a time until I get my desired flavor.

Chill for at least 3 – 4 before serving.
